The perfect chocolate for those on a diet

Being a chocolate lover, how do you cope with lactose intolerance? Simple: choosing chocolate bars without milk. And if you are on a diet, sugar free chocolate bars are the solution. So, if there is no sugar and no milk, you have a chocolate bar only made with cocoa. In technical terms it is called cocoa mass. If you have ever tried it, you should remember an extremely bitter taste which, for some people, make it impossible to eat. Well, not the type I found at Salone del Gusto last week.

Chocolate

Cioccolateria Santori is a chocolate maker from Castiglione in Teverina, in the province of Viterbo. I stubled upon their stand right after lunch, while wandering at the most famous Food Fair of Italy. I was looking for something sweet to buy (and taste after my Lavazza coffee). And there it was.

I tried chocolate with nuts, dark chocolate with 75% of cocoa and, of course, the cocoa mass. I was delighted by the flavours and the high quality of their products and extremely surprised that, thanks to the way they process it, the cocoa mass looks like any other chocolate bars.

Their productions also include pralines, Easter eggs, nougat and offer catering services.
